Trilith Guesthouse Appoints New Executive Chef

Fayetteville, Ga. (Dec. 4, 2024) – Trilith Guesthouse, located in Town at Trilith in Fayetteville, Georgia, is pleased to announce the appointment of Chef Craig Green as Executive Chef. Chef Green will oversee all culinary operations at the hotel, including the signature restaurant Prologue Dining & Drinks, the rooftop Oliver’s Twist Bar & View and catering for on-property private events.

“Craig brings a wonderful mix of culinary creativity and kitchen management to the hotel’s food and beverage operations,” said James Green III, General Manager of Trilith Guesthouse. “As executive chef, we’re confident he will lead our exceptional culinary team to new heights, enhancing the guest experience and enriching their unique stories.”

Now driving the culinary narrative, Chef Green brings a colorful culinary background and more than a decade of management experience to the hotel. Drawing on his Jamaican background, he has developed a diverse culinary style with mouth-watering menu specialties. He most recently was the executive chef at the prestigious Atlanta National Golf Club, where he honed his expertise in hospitality. Prior to that, he was executive sous chef at The Westin Peachtree Plaza, Atlanta and a multi-unit sous chef of LaGuardia Airport in New York, where he oversaw operations of seven dining outlets in a fast-paced, high-volume environment.

Trilith Guesthouse’s signature, street-level Prologue Dining & Drinks combines culinary creativity with a menu that pays tribute to the diverse tapestry of Southern heritage. Infused with locally sourced ingredients, the dishes celebrate the region’s vibrant flavors and traditions, creating a comforting yet sophisticated atmosphere that invites guests to savor the art of breaking bread together. Through breakfast, brunch, lunch, and dinner, Prologue’s menu mesmerizes with featured items such as Chicken & Waffles, Trilith Hot Honey Crispy Chicken, Crawfish Risotto and Sweet Dairy Hush Puppies, all pairing perfectly with a selection of crafted cocktails and impressive list of wines. Climbing to new heights, Oliver’s Twist Bar & View puts a “twist” on Dickens’ rags-to-riches classic, serving up whimsical cocktails and elevated pub fare with views of the idyllic Town at Trilith. Featured menu items include Prawn Cocktail, Truett Oysters and Pub Burger & Chips.
