Fayetteville, Ga. (Dec. 13, 2023) – Trilith Guesthouse, the highly anticipated 193-room hotel at the main entrance of the award-winning, European-inspired Town at Trilith, is pleased to announce the appointment of Chef Thomas Parker as Executive Chef. Chef Thomas will oversee all culinary operations at the hotel, including the signature restaurant Prologue Dining & Drinks, and the rooftop Oliver’s Twist Bar & View for which individual websites have just launched.
“We’ve given Thomas a blank canvas to showcase his passion for food and culinary creativity, immersing our guests in a feast for the senses, from beginning to end,” said James Green III, General Manager of Trilith Guesthouse. “The culinary scene is an integral part of the story at Trilith Guesthouse, with Chef Thomas and his team dedicated to captivating every guest with their creations.”
Driving the culinary narrative, Chef Thomas brings more than a decade of restaurant and hospitality experience to Trilith Guesthouse. He most recently led food and beverage operations as Executive Chef at The Karol Hotel, a 123-room Marriott Tribute Portfolio hotel in Clearwater, Florida. Prior to that, he was Executive Chef at the Doubletree by Hilton in Canton, Ohio, the partner hotel of the Pro Football Hall of Fame. A native of Warren, Ohio, Chef Thomas was also Chef de Cuisine at the Hilton Cleveland Downtown and held positions with Landmark Restaurant and luxury hotel, Metropolitan at The 9, both based in Ohio.
“I believe great chefs are, at their heart, great storytellers, feeding the growing interest in food culture with every dish,” said Chef Thomas. “Old family recipes, techniques and flavors discovered in far- off lands, ingredients from local farms – these all add richness and depth to guests who have a genuine interest in the stories behind every fabulous meal at Trilith Guesthouse.”
Chef Thomas will weave his tasty tales at the hotel’s two restaurants. The signature, street-level Prologue Dining & Drinks combines culinary creativity with a menu that pays tribute to the diverse tapestry of Southern heritage. Infused with locally sourced ingredients, the dishes celebrate the region’s vibrant flavors and traditions, creating a comforting yet sophisticated atmosphere that invites guests to savor the art of breaking bread together. Through breakfast, lunch, weekend brunch and dinner, Prologue’s menu mesmerizes with featured items such as Chicken & Waffles, Blackened Stuffed Catfish, Short Rib Bolognese, and Pork Belly Burnt Ends, all of which pair perfectly with a selection of crafted cocktails and impressive list of wines. Prologue’s hours of operation are Sunday through Saturday from 7 a.m. to 10 p.m.; closed for dinner on Sunday. Learn more on Facebook and Instagram. Climbing to new heights, Oliver’s Twist Bar & View puts a “twist” on Dickens’ rags-to-riches classic, serving up whimsical cocktails and elevated pub fare with views of the idyllic Town at Trilith. The menu offers a subtle nod to London with features such as Scotch Eggs, Bangers & Mash, Short Rib Cottage Pie, and Fish & Chips. Oliver’s Twist hours of operation are Wednesday and Thursday, 4 p.m. to 11 p.m.; Friday, 4 p.m. to 12 a.m.; Saturday, 12 p.m. to 12 a.m.; and Sunday, 12 p.m. to 11 p.m. Learn more on Facebook and Instagram.
