Overview of the role

The Prep Cook will be responsible for preparing the kitchen in a multitude of tasks to include the day-to-day preparation of the meals within all the F & B outlets and to continually uphold the Luminary & Co service standards and Mainsail Lodging & Development standards.

What you have

  • Minimum 1 year working in a kitchen setting
  • High school diploma, equivalent or higher
  • Excellent communication skills, both written an verbally
  • Basic culinary skills in cooking, baking, pastry, sauce work, and knife skills
  • Ability to work in a clean, organized, orderly manner
  • A sense of ownership in everything that you do
  • Servsafe certification, or ability to attain certification
  • Excellent customer service skills
  • Experience working on a team and being a team player

What you’ll do

  • Follow and execute recipes to prepare food items for meal service
  • Basic vegetable preparations – peeling, slicing, dicing, and portioning
  • Basic sauce preparation: stocks, salad dressings, sauces, vinaigrettes
  • Bulk cooking of food items to include braised and cooked meats, soups, and side dish items
  • Minor butchering – process poultry, meat, and seafood
  • Preparation of baked goods and pastry items
  • Maintain cleanliness and organization of kitchen coolers in order to properly store prepped items
  • Stock kitchen supplies in specified areas and ensure organization
  • Keep kitchen setting in a clean and organized state, to include trash disposal and dish pit duties
  • Other necessary duties as reasonably assigned by manager
